To start off the new year, the troop drove to Hardee County to visit the beautiful wilderness of Highlands Hammock State Park.

After a quick breakfast, 4 of the scouts explored the scenic trials the state park has to offer. The hike featured several native ecosystems from cypress swaps to pine swamps, and brought a multitude of animal sightings including white ibis, ininga, and the illustrious American alligator. The scouts were also able to learn about native Floridian plants such as the cypress, sabal plam, and hockey trees as well as coral and beauty berry bushes, and the royal fern.
For lunches on our camping trips, a favorite dish of ours in Walking Tacos. They are quick to make, require minimal clean up, and always taste amazing.
Ingredients:
- 2.5 lbs of ground beef or turkey
- 1 family-size bag of Doritos
- 1 head of Iceburg lettuce
- Sour cream
- Salsa
- Shredded cheddar cheese
- Taco seasoning (to taste)
Preparation:
- Set up a camping stove with propane and add a large frying pan on top of the flame
- Add the ground turkey into the frying pan and sauté it over medium-high heat until the meat cooks all the way through.
- Use your taco seasoning to flavor the meat and set it to the side.
- Dice the lettuce
- Crush the Doritos into medium sized pieces.
- Lay out the meat, lettuce, Doritos, sour cream, salsa, and cheese and allow everyone to build their own bowls.
